- Method: Tetsu Sweet and Light (50:70). She may not look like much, but she’s got it where it counts.
- Beans: Redemption Rubén Ortega. Now that’s a name I’ve not heard in a long time. A long time.

- First (50g in 10s): 5g over 3s early clearly excited to have these beans back
- Second (70g in 10s): bang on got a hold of myself
- Third (180g in 10s): 3s over 5g under uh everything’s under control. Situation normal.
Tasting Notes
Nose: It’s the plum sauce all over again I am very excited
First taste: Just an absolutely glorious first hit. The plums are back and I had forgotten just how big and bold they are. Unfortunately, the exit is a dark soy sauce and that’s if I’m being generous.
Second taste: All is forgiven on the next sip, of course, as the bright centre of this particular universe explodes again and as my taste buds adjust the soy sauce becomes less pronounced and this just becomes a great cup of coffee.
I do think these beans benefit from a coarser grind—I think there’s so much flavour in them that it doesn’t take that much to release it—and as a result the aftertaste is not ideal.
Some minor tweaks and I think we can easily get an extra half moon.
