  • Ratio: 70:30
  • Third pour water: 150g

Method: Tetsu, Acidic and Light (variation)

Target weight and time in parenthesis

  • First (70g in 10s): 75g in 8s. Oops.
  • 3 big swirls over 5s
  • Wait 30s
  • Second (30g in 10s): Spot on. Hardly a challenge, though.
  • Wait 35s
  • Third (150g in 20s): 5g over because I’m thirsty
  • BedClear:​ 4:00(!!)

  • It’s Monday again that means a whole new week for making coffee wheeeeeeee!
  • Used the grind setting for the Origin beans on these Redemption beans. Picard face palm dot gif.
  • If I use 100g of water for the 40% the ratio math becomes so much easier
  • There’s nothing more scientific than being guided by arbitrary numbers
  • I have a good feeling about this one
  • Except for that clear time. Woof.

Tasting Notes

Nose​: Cranberries today with a side of buttered toast.

First taste: An initial bright hit that develops into soy sauce and roast parsnips and something I can’t pinpoint as it heads to the exit. I worried that it would become overly bitter when it finally left but it retained this smooth savoury complexity and was just chill the whole time. You’re a good guest, bean. You’re welcome every time.

Second taste: The Fruit That Shall Not Be Named is taking its rightful place as the Queen of the Mouth as this mug cools, but these savoury tones are not going down without a fight.

  • Grind size: 1Zpresso QS @ 2.2 (4.95mm)
  • Pre-grind anti-static water: 3 drops in with the beans
  • Water temperature: 88°
  • Hario V60 01 brown filter
  • Funnel warming water: 400ml @ 88°
  • Water hardness: medium (calcium carbonate 100–200ppm)
